I met up with David LaMarche, Conductor, American Ballet Theatre, after he conducted "Symphonic Variations", music by CÚsar Franck, and "Prodigal Son", music by Prokofiev. We always discuss the balletic themes and mood, delving into the choreographer's intent. We were joined in lively conversation by Dean Miller, Proprietor of White Oak, who oversees the perfected background music as well as cuisine and seating. David and I had an expansive marble bar table to ourselves. Each dish was intensely delicious, inducing a craving for more.

David ordered a selection of six chilled oysters, Blue Point oysters from Long Island, Kumamoto oysters from the west coast, and Lucky #13, Long Island oysters from the Fire Island area. White Oak is the only restaurant in New York that has Lucky #13 oysters. I, meanwhile, found our Speck & Arugula Homemade Flatbread, with Ricotta, Honey, Fontina, and Fig Preserves, to be so original and aromatic in taste. We also shared an order of two Maryland Lump Crab Cakes, with House Slaw, Cajun Remoulade, and House Greens. Each dish was freshly made to order. Not one dish sits waiting; it's cooked and immediately served, so the flavors are inviting and intact.
